Harvesting: Grapes are hand-picked and -sorted
Fermentation: 50% to 100% destemming depending on the vintage. Cold maceration for ten days or so with frequent pumping over and punching down.
Maturation: Approximately 15 months on lees in oak barrels with 20% new barrels
Tasting notes: A delicate nose, aromas of red fruit (blackcurrant, redcurrant) and intense colour. Great structure and fine tannic presence in the mouth.
Food match: Roasted white meats, game birds, charcuterie, grilled red meats

The colour is bright and deep ruby red with bluish highlights. The nose is intense with full aromas of ripe red fruits, mineral (schist) and smoky hints on soft spices. This full-bodied wine has a nice balance between sweetness and a fine tannic structure. The fruity and peppery flavours dominate on licorice and Espelette pepper finish. This Châteauneuf-du-Pape wine is really complex, full of freshness and elegance with a long finish. 80% Grenache, 15% Syrah, 5% Mourvèdre
