The grapes are harvested by hand. They are destemmed, then put into vats and left to macerate for three weeks, with daily pigeages. After a long cuvaison, the juice of the pressed grapes is drawn and the marc is pressed. The free-run and press wines are then blended.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe wine is aged in barrels of varying origins, ages and degrees of  “toasting” for 12 months. The goal is to gain complexity without over-extraction. Blending and bottling is done at the end of September. Pale ruby color, aromas of black cherry, peppery carnation and peony, silky tannins.
